I\u2019m pretty sure food is the most stressful thing for me in this homemaking journey. Eesh. I need to feed everyone. Every day. Several times a day. And it does not go well when there\u2019s not a plan in place, nor when there\u2019s not any food in the fridge. Eesh again! Do you know what you\u2019re eating this summer? All I know is that I do not want to be in the kitchen hours on end. So I must have a plan. I need recipes I can make as fast as possible.<\/p>\n\n\n\n<p>Enter my meal plan anchors\u2026my favorite thing I added to my <a href=\"https:\/\/faithfulandflourishing.org\/staging\/9315\/s\/Daily-Anchors.docx\" target=\"_blank\" rel=\"noreferrer noopener\">anchor list.<\/a> I already have a pretty good rotation that works well (<a href=\"https:\/\/faithfulandflourishing.org\/staging\/9315\/blog\/summer-meal-rotation\" target=\"_blank\" rel=\"noreferrer noopener\">see it here<\/a>), but I needed it to be whittled down even further, so that when it comes time to sit down and plan out what we\u2019re eating for the week, I don\u2019t have to take much time at all.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Salsa Sunday<\/h3>\n\n\n\n<p>We have leftovers for a late lunch on Sundays, but Sunday evenings are weird. We leave too early to eat dinner before church, and we get home so late we\u2019re starving to death by the time we get back. We need something FAST! Enter chips and salsa. That\u2019s what we\u2019re eating Sunday nights. Boom! Decision made! No searching around in cabinets at 10:00 pm trying to figure out what we\u2019re having for a snack.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Monday: Sandwich Night<\/h3>\n\n\n\n<p>We need quick on Mondays because it\u2019s just an off day trying to catch up from the weekend and planning ahead for a new week. Enter sandwiches\u2026whatever sandwich that sounds good that day.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Grilled cheese<\/li>\n\n\n\n<li>Sloppy Joes<\/li>\n\n\n\n<li><a href=\"https:\/\/dinnerthendessert.com\/philly-cheese-steak-sloppy-joes\/\" target=\"_blank\" rel=\"noreferrer noopener\">Philly Cheesesteak Sloppy Joes<\/a><\/li>\n\n\n\n<li>Burgers<\/li>\n\n\n\n<li><a href=\"https:\/\/cooking.nytimes.com\/recipes\/1014733-pulled-pork-sandwiches\" target=\"_blank\" rel=\"noreferrer noopener\">Pulled Pork Sandwiches<\/a><\/li>\n\n\n\n<li>Hot Dogs<\/li>\n<\/ul>\n\n\n\n<p><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Taco Tuesday<\/h3>\n\n\n\n<p>Can Tuesday be anything else? I like this one because we have lot of good taco recipes. Here are some of my favorites.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><a href=\"https:\/\/www.cookingclassy.com\/grilled-chicken-and-avocado-street-tacos\/\" target=\"_blank\" rel=\"noreferrer noopener\">Chicken Street Tacos<\/a><\/li>\n\n\n\n<li>Beef Tacos<\/li>\n\n\n\n<li><a href=\"https:\/\/www.recipetineats.com\/pork-carnitas-mexican-slow-cooker-pulled-pork\/#wprm-recipe-container-20695\" target=\"_blank\" rel=\"noreferrer noopener\">Carnitas<\/a><\/li>\n\n\n\n<li><a href=\"https:\/\/www.allrecipes.com\/recipe\/127628\/mexican-tinga\/\" target=\"_blank\" rel=\"noreferrer noopener\">Tinga<\/a><\/li>\n\n\n\n<li>Fajitas<\/li>\n\n\n\n<li>Quesadillas (also love to do Taco or <a href=\"https:\/\/www.allrecipes.com\/recipe\/234487\/fajita-quesadillas\/\" target=\"_blank\" rel=\"noreferrer noopener\">Fajita Quesadillas<\/a> with leftovers!)<\/li>\n<\/ul>\n\n\n\n<p><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Wednesday: Quickie Meals<\/h3>\n\n\n\n<p>Wednesdays are for quick meals\u2026because church! Think a quick chicken salad meal with rotisserie chicken and bagged chopped salad from the deli section at your local grocery store. This is my current favorite because it\u2019s very quick and a perfect summer meal. Add a slice or two of butter bread to fill up your husband.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Easy Rotisserie Chicken and Bagged Salad<\/li>\n\n\n\n<li><a href=\"https:\/\/www.gimmesomeoven.com\/baked-potato\/#tasty-recipes-63691\" target=\"_blank\" rel=\"noreferrer noopener\">Perfect Baked Potatoes<\/a><\/li>\n\n\n\n<li>Ham and Cheese Quesadillas<\/li>\n\n\n\n<li>Smoothies<\/li>\n\n\n\n<li>Naan Pizzas<\/li>\n\n\n\n<li>Frozen Pizza<\/li>\n\n\n\n<li>Frozen Taquitos<\/li>\n<\/ul>\n\n\n\n<p><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Thursday: Meat and Potatoes<\/h3>\n\n\n\n<p>My husband is a meat and potato man. This meal is especially for him. A roast, honey mustard or garlic honey chicken, mini meat loaves, any grilled meat. Potatoes can mean French fries, baked potatoes, foil packet potatoes, even rice if it comes down to it. I know that\u2019s not a potato, but starch counts.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Mini Meat Loaves and Baked Potatoes<\/li>\n\n\n\n<li><a href=\"https:\/\/damndelicious.net\/2015\/06\/05\/slow-cooker-honey-garlic-chicken-and-veggies\/\" target=\"_blank\" rel=\"noreferrer noopener\">Honey Garlic Chicken and Veggies<\/a><\/li>\n\n\n\n<li>Grilled Meat and Veggie Foil Packets<\/li>\n\n\n\n<li><a href=\"https:\/\/www.dinneratthezoo.com\/grilled-chicken-kabobs\/#wprm-recipe-container-14126\" target=\"_blank\" rel=\"noreferrer noopener\">Grilled Meat Kabobs<\/a><\/li>\n\n\n\n<li>Bacon Burger Bowls<\/li>\n\n\n\n<li>Roast<\/li>\n<\/ul>\n\n\n\n<p><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Friday: Leftovers<\/h3>\n\n\n\n<p>By this time we usually have plenty of leftovers. We\u2019ll finish those up or go out to eat. (But we live pretty far from everything, so we don\u2019t go out to eat too often on Fridays anymore.)<\/p>\n\n\n\n<p><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Saturday: Non-American Cuisine<\/h3>\n\n\n\n<p>I typically have more time on Saturday evenings for experimental cooking. This is when I do all of my extra flavorful cooking\u2026think Indian, Chinese, Mexican, etc. I always make sure I make plenty so we have leftovers for a quick lunch after a busy Sunday morning.
